Zucchini Brownies with Fudge Frosting
Have an abundance of zucchini in your garden? Add some to a Betty Crocker® Gluten Free brownie mix to make easy, extra-moist brownies.

1 box Betty Crocker™ Gluten Free brownie mix
¼ cup butter, melted
1 cup shredded zucchini
1 1/2oz unsweetened baking chocolate
1 1/2cups powdered sugar
2to 3 tablespoons milk
1.Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom only of 8- or 9-inch square pan with cooking spray (without flour).
2.In medium bowl, stir brownie mix, 1/4 cup butter, the eggs and zucchini until well blended (batter will be thick). Spread batter in pan.
3.Bake 33 to 38 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Cool completely in pan on cooling rack, about 1 hour 30 minutes.
4.In medium microwavable bowl, microwave 3 tablespoons butter and the chocolate uncovered on High about 1 minute, stirring once, until melted. Stir in powdered sugar and enough milk to make frosting smooth and spreadable. Frost brownies. Cut into 4 rows by 4 rows.
Pretzel Brownie Bars
Layer brownies and pretzels for the perfect sweet-and-salty fudgy dessert bar.

1 1/2cups crushed pretzels
1/4cup granulated sugar
1/2cup butter or margarine, melted
1box (1 lb 2.3 oz) Betty Crocker™ fudge brownie mix
2/3cup vegetable oil
1cup powdered sugar
2tablespoons butter or margarine, softened
2squares (1 oz each) unsweetened chocolate, melted
2to 3 tablespoons milk
1/2cup crushed pretzels
1.Heat oven to 350°F (325°F for dark or nonstick pans). In medium bowl, mix crust ingredients. Press in ungreased 13×9-inch pan. Bake 8 minutes; cool 10 minutes.
2.In medium bowl, stir brownie ingredients until blended. Carefully spread batter over cooled crust. Bake 24 to 26 minutes or until toothpick inserted 2 inches from side of pan comes out clean or almost clean. Cool completely on cooling rack, about 1 hour.
3.In medium bowl, beat powdered sugar, 2 tablespoons butter, melted chocolate and the vanilla with electric mixer on low speed until combined. Beat in 1 tablespoon milk until blended. Beat in additional milk, 1 tablespoon at a time, until frosting is desired spreading consistency. Frost cooled brownies; sprinkle with crushed pretzels. Cut into 8 rows by 4 rows.
